Preparation of Sweet Potatoes
- Preheat oven to 400°F (200°C).
- Scrub the sweet potatoes under running water and pat dry.
- Poke 6 to 10 holes in each sweet potato with a fork.
- Rub with a little olive oil and a pinch of salt.
Roasting Sweet Potatoes
- Place sweet potatoes on a sheet pan and roast for 45 to 60 minutes until tender.
Preparing Chickpeas
- Drain and rinse chickpeas, then pat dry.
- Toss chickpeas with olive oil, salt, and spices.
- Roast at 425°F for 20 to 30 minutes, shaking the pan occasionally.
Serving
- Slice the roasted sweet potato down the middle and fluff the inside.
- Add chickpeas and your choice of toppings.
- Drizzle with tahini and enjoy!
