Main Ingredients
  • 4 pieces Skinless chicken breasts or thighs Thighs are recommended for more juiciness.
  • 1 tbsp Turmeric Anti-inflammatory spice.
  • 4 cloves Garlic Minced.
  • 1 tbsp Ginger Freshly grated.
  • 2 cups Low-sodium broth Chicken broth is the classic choice.
  • 1 small Onion Red onion preferred for added flavor.
  • to taste Salt & pepper For seasoning.
Optional Flavors
  • 1 tbsp Fresh lemon juice Optional for added brightness.
  • 1 tsp Smoked paprika For extra flavor.

Method
 

Preparation
  1. Place chicken and all spices into the slow cooker.
  2. Pour broth over the chicken to barely cover it.
  3. Cook on low for 5-6 hours or high for 2.5-3.5 hours until the chicken shreds easily.
  4. Let the chicken rest in the juices for 10 minutes before shredding with two forks.

Notes

To keep the chicken moist, do not overcook and always add broth. For a variety of flavors, consider adding taco spices, lemon herbs, or using bone broth.
