Probiotic Pickled Garlic

Ingredients
  

Main ingredients
  • 1 to 2 cups peeled garlic cloves Enough to fill your jar
  • 1 tablespoon fine sea salt Per 2 cups of filtered water
  • 2 cups filtered water Avoid chlorine for better fermentation
Optional flavorings
  • peppercorns or chili flakes Optional for extra flavor

Method
 

Preparation
  1. Clean all utensils and the jar with hot soapy water.
  2. Peel the garlic using the flat of a knife to help remove the skins easily.
  3. Make the brine by dissolving the salt in the filtered water until clear.
  4. Pack the garlic cloves into the clean glass jar, leaving a little space at the top.
  5. Pour the brine over the garlic cloves until completely covered.
  6. Keep the garlic submerged using a fermentation weight or a clean glass piece.
  7. Ferment at room temperature for 2 to 3 weeks, loosely lid the jar or burp it daily.
  8. Taste the garlic around day 7, and refrigerate once it reaches your desired flavor.

Notes

Store the jar out of direct sunlight and ensure all garlic cloves remain submerged to avoid mold. This recipe is vegan and gluten-free as long as plain salt is used.
