  • 1/4 cup apple cider vinegar Use 'with the mother' for best flavor
  • 2 to 3 tablespoons honey or maple syrup Adjust to taste
  • 3 cups cold water Can use still or sparkling
  • Ice for serving

Method
 

Preparation
  1. Add the peaches, ginger, apple cider vinegar, and sweetener to a blender with 1 cup of water. Blend until smooth.
  2. Strain it if you want a cleaner drink, or keep it unstrained for a rustic texture.
  3. Pour the mixture into a pitcher and add the remaining water. Taste and adjust sweetness or acidity as needed.
  4. Chill for at least 30 minutes for the best flavor.
  5. Serve over ice and top with sparkling water if desired.

Notes

For the best flavor, let the switchel sit in the fridge for a while to allow flavors to meld. Adjust sweetness to your liking, and consider sparkling water for a refreshing touch.
