  • 2 tablespoons olive oil
  • 3 to 5 cloves garlic, minced adjust based on preference
  • 1 large lemon (zest and juice) zest enhances flavor
  • 1 teaspoon dried oregano or Italian seasoning
  • 1 teaspoon dried thyme optional, but nice
  • 3/4 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • optional chopped parsley for serving

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Lightly oil a baking dish or line it with parchment paper.
  3. Pat the chicken dry with a paper towel to enhance browning.
  4. In a small bowl, mix olive oil, garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper.
  5. Coat the chicken with the mixture on both sides, spooning any extra on top.
Cooking
  1. Bake for about 18 to 22 minutes, depending on thickness.
  2. Let it rest for 5 minutes before slicing to keep the juices in.
