  • 2 Green onion tops Sliced, if tolerated.
Vegetables
  • 2 medium Carrots Peeled and chopped.
  • 1 medium Zucchini Chopped into small pieces.
  • 2 medium Peeled potatoes Chopped into cubes.
Proteins
  • 1 cup Shredded chicken Cooked, can substitute with turkey or tofu.
Herbs and Seasonings
  • 1 tbsp Fresh dill For garnish.
  • 1 tbsp Olive oil For added richness.
Optional Additions
  • 1 cup Rice or rice noodles For a fuller soup.
  • 1 lemon Juice of For finishing.

Method
 

Preparation
  1. Pick your base: use either broth or water with a little salt.
  2. Add gentle aromatics like ginger and green onion tops.
  3. Add in the easy veggies: chopped carrots, zucchini, and peeled potatoes.
Cooking
  1. Simmer everything until the vegetables are very soft.
  2. Add the shredded chicken, and rice or noodles if using.
  3. Blend the soup if you prefer a smoother texture, or leave it chunky.
Finishing Touches
  1. Finish with salt, fresh dill, olive oil, and a squeeze of lemon juice.
  2. Serve warm and enjoy!
