  • 1 lb ground turkey High protein and cooks quickly.
  • 1 pkg coleslaw mix or shredded cabbage Crunchy and rich in fiber.
  • 2 medium carrots Shredded for natural sweetness.
  • 3 stalks green onions Chopped, for freshness on top.
  • 3 cloves garlic Minced, for flavor.
  • 1 inch ginger Minced, for flavor.
  • 1 tbsp coconut aminos or low sodium soy sauce For a salty, savory base.
  • 1 tbsp rice vinegar Adds tang.
  • 1 tsp toasted sesame oil For that takeout flavor.
  • to taste sriracha or chili flakes Optional for heat.

Method
 

Cooking
  1. Heat a large skillet over medium heat, adding oil if needed.
  2. Add ground turkey and cook until no longer pink, breaking it up as it cooks.
  3. Add garlic and ginger, stirring for about 30 seconds to enhance the flavor.
  4. Add coleslaw mix and carrots, tossing and letting it soften for 3 to 5 minutes.
  5. Pour in coconut aminos (or soy sauce), rice vinegar, and a drizzle of sesame oil.
  6. Cook for 1 to 2 more minutes, tasting and adjusting flavor as necessary.
  7. Top with chopped green onions and sesame seeds if desired. Serve immediately.

Notes

Store in airtight containers for up to 4 days. Freeze if needed, but expect softened cabbage after thawing. Store toppings separately to keep them fresh.
