  • 1 inch fresh ginger, sliced For flavor and digestive support.
  • 1 pinch turmeric Use with black pepper for better absorption.
  • 1 cup shredded cooked chicken Alternatively, use tofu for a plant-based option.
  • 4 cups bone broth or vegetable broth For the soup base.
  • 1 cup cooked rice For added carbs and fiber.
  • 1 cup fresh spinach Cooked spinach is easier on sensitive stomachs.
  • 1 squeeze lemon juice To finish the soup.

Method
 

Preparation
  1. In a pot, warm the olive oil over medium heat.
  2. Add sliced ginger and a pinch of turmeric, sauté for 1-2 minutes.
  3. Add the shredded cooked chicken and pour in the broth.
  4. Bring to a simmer, then add cooked rice and spinach.
  5. Simmer for an additional 5 minutes and finish with a squeeze of lemon juice.

Notes

Feel free to swap chicken with tofu or chickpeas for a plant-based version. Ginger can be added to many meals to ease bloating.
