Preparation
- Heat your oven to 325°F (163°C). Lightly grease 4 ramekins or a small baking dish.
- In a bowl, whisk the eggs until smooth to avoid eggy bits.
- Add the Greek yogurt, sweetener, starch, vanilla, zest, cinnamon, and salt. Whisk until totally smooth, ensuring there are no lumps.
- Pour the mixture into ramekins and gently tap them on the counter to pop any air bubbles.
Baking
- Bake for 20 to 28 minutes, until the edges are set and the center is slightly jiggly like a soft cheesecake.
- Cool on the counter for 20 minutes, then chill for at least 2 hours before serving.
Notes
Store in the fridge covered for up to 4 days. Freezes well, but texture may shift when thawed.
