  • 1 teaspoon grated ginger Optional, but adds flavor.
  • 1 each juice of 1 lemon Freshly squeezed lemon juice enhances flavor.

Method
 

Cooking Instructions
  1. Heat olive oil in a pan over medium heat.
  2. Add chicken, season with salt and pepper, and cook until done.
  3. If using, add grated ginger and stir to combine.
  4. Add baby spinach and let it wilt.
  5. Turn off the heat and squeeze in the lemon juice, tossing everything together.
  6. Serve over cooked rice or quinoa.
